Oatmeal is cheap and healthy and can be quite tasty. Skip the instant stuff and buy bulk rolled oats (not quick oats) for a quick and easy meal.
John and I make what we call “fancy oatmeal” – the original recipe is here, but in a nutshell, here’s how to make some tasty oatmeal:
2.5 cups of cold water
1 cup of rolled oats
1) Combine water, oats, and cinnamon in small pot.
2) Bring to a boil over medium-high heat, stirring regularly.
3) Reduce heat to medium, simmer 10 minutes, stirring, till thick and creamy.
We top our oatmeal with chopped pecans, dried apricots, brown sugar, and milk. We buy the pecans from Costco and the apricots from Fresh & Easy, sometimes Sprouts if they’re on sale. I chop the apricots with a knife and the pecans for a short time in a food processor and keep them in tupperware so it’s easy and quick to make.
